Taltarni are always there to please. I mean it, I don't think I've had a bottle from them that I haven't thoroughly enjoyed, with each one as uniquely pristine as the next. Now let's talk sangiovese: certainly the steadier climate in Pyrenees offers this variety the ripening period that will show off all of its complexities; fine tannins and an earthy, herbaceous, floral and juicy core. You could crack this over a bit of red meat, or pair it with something cheesy and comforting like a lasagne and you'll be praising the wine gods that wine like this exists.

This has all the playfulness and bright, snappy acidity we love from barbera, with high-tone red and purple fruit leading and elevating the wine. Cherry and plum at the fore, with a bit of leather and spice rounding out the aromatic profile. Juicy and jubey, fresh and energetic. Completely unfussy and easy-going mid-week red. If ever there was a wine to pair with takeaway pizza, this is it.

I am a loud and proud proponent of Italian grape varietals being grown and utilised in Victoria. On the whole they take so well to local terroir, maintaining the rustic and earthy nature of their homeland but bringing classic Aussie freshness and fruit density along with them. Lucky for us, the team at Rob Dolan are some of the best winemakers in the country right now, so of course they could nail this beauty. Sappy sangiovese leads out, with nebbiolo and shiraz tucked neatly in behind to provide structure and weight. Red berries into dark brooding bramble flanked by mocha and red liquorice. The fantail finish is assured and lasting. What a wine.

Look, we know we don’t bring you a lot of malbecs, Mofos. We promise we’re not trying to deprive you, but if we’re honest, not many Aussie producers have a crack at this little gem. Here you have one that knows less is more. Fruit from McLaren Vale and Langhorne creek sings with plum and cocoa. Some time in the bottle has mellowed those intense tannins and tart edges, bringing it to smooth perfection—what a great quaffer for your weeknight.

Bodegas Olivares are a family-run winery in the sunny region of Jumilla in the south-east of Spain that we’re always proud to work with. We’ve always received some of our best value wines from them, vintage after vintage. This is a rework of the popular GSM, with the local monastrell (or ‘mataro’ to Aussies) taking the lead role to make an MGS. The wine has sun-drenched summer fruit with a fresh, breezy acidity from the high altitude in which it’s grown. With sweet, swarthy berries and an exotically spiced finish, we can attest that it’s bloody hard to turn down a second (or third) glass.

There's a lot of chat about merlot's place in the global wine zeitgeist, but here's one undeniable fact; merlot still sits squarely at he centre of the worlds most sort after wines (hello, Petrus). For us here at the 'Fo, it's an unbeatable classic. This is the kind of wine that will make a lifetime merlot fan out of any drinker - succulent and plump and seemingly unending in its generosity, it just keeps on giving. Quite densely compact at the beginning, but as it is allowed to open up the wine unfurls some and offers chocolate, leather, ground coffee, and classic anise. Layered and smooth, it wraps itself around the palate and forms a pleasantly imposing mouthfeel. A stunner, plain and simple.
