Since its inception in the Australian wine industry in 1987, Thorn-Clarke adapted the simple, age-old saying "you can't make good wine from bad grapes" which continues to inspire them 27 years on. Considered a stalwart of the Barossa, Thorne-Clarke's rich history within the region goes back to six generations of proud Barossan winemaking and craftsmanship, so it seemed natural that husband-and--wife team David and Cheryl Clarke (ne Thorn) would start up their own namesake winery. Celebrated as one of the largest family-owned estate-based businesses in the Barossa, Thorn-Clarke are proud owners of four vineyards (Two in the Barossa Valley for reds and two in the Eden Valley for whites) which have produced an impressive range of award winning wines for almost three decades.
Next door to the Barossa Valley lies Eden Valley, a small yet highly significant Aussie region celebrated for their signature cool climate wines and impressive history. According to our sources, the first Eden Valley vineyard was planted in the early 1840s, and today there are just over 12 local wineries, both boutique and family-owned that continue to produce, exceptional vintages, including the famous Yalumba and Henschke. Renowned for their signature riesling and shiraz, the glorious region is a heavenly picking field for A-grade fruit. It comes as no surprise that many of Australia's winemakers source their grapes from the Eden Valley.
The rules are there ain’t no rules, but here are some foods we think will work pretty well with this wine...
Oysters with Japanese sauce
- 3 tsp soy sauce
- 1/4 cup (60ml) seasoned rice vinegar*
- 1/2 tsp finely grated ginger
- 16 freshly shucked Pacific oysters
- 1 Lebanese cucumber, cut into julienne
- 50g flying fish (tobikko) or salmon roe
- Mix the soy sauce, vinegar and ginger in a small bowl then refrigerate until ready to use.
- Just before serving, place oysters on a bed of crushed ice or rock salt for presentation. Spoon the dressing over, then top with cucumber and roe. Serve.
