Giant Steps is clearly one of the leading producers in the Yarra with winemaking icon Steve Flamsteed steering the ship in the winery. Ocarina is their left-of-centre chardonnay and itās an absolute revelation. They take small parcels of fruit from their five single vineyards and ferment and age in a ceramic egg. The finished wine is then bottled unfiltered and unfined, providing the purest expression of the variety that they can craft. Mike Bennieās description below certainly does this amazing wine justice.

āA parcel of fruit from each of Giant Steps' single vineyard sites, whole-bunch pressed to 675l clay eggs for wild yeast open fermentation, the lids sealed with clay for maturation. It's harder to do nothing they say. There's a beautiful pattern in the mouth, reflecting no pumping (just gravity), no fining, no filtration.ā
