From one of our favourite WA producers comes this, their top chardy. Call it a grand reserve if you’d like as that’s exactly what it is. They’ve gone super selective with their bunches, hand harvesting with precise timing before a slow, gentle extraction. The resulting juice is put into French oak and left to ferment with wild yeast. It was left on lees with weekly stirring, building complexity, texture and tension. After ten months in oak, a further barrel selection was undertaken with only seven making the cut. Stonefruit, grapefruit, lemon, funk and richness. This has got it all.
