The result of this aged beauty is “dark cherry, plum and mixed spice characters with nuances of cedar and dried herbs. It is ripe and finely textured on the palate, and offers delicate fruit intensity together with savoury complexity, enhanced by smooth mouthfeel and polished tannins.” so says Sam Kim, and Sam tastes a lot of wine, heck it’s his profession, he would know what complexity tastes like. “Full, even, dark ruby-red colour with slight purple hues, lighter on the rim. The nose is full and openly accessible with aromas of ripe dark raspberry fruit that build to form a firm core with interwoven notes of dark herbs, dark red florals and suggestions of oak spices. This has attractive layers of fresh, aromatic detail. Medium-full bodied, the palate features sweet and juicy, vibrant and bright fruit flavours of dark raspberries and cherries along with subtle notes of dark herbs and oak spices. The mouthfeel is lively with good vigour and energy and flows along a fine, grainy-textured line with fresh, lacy acidity lending tension. The palate is well-balanced and carries to a positive, long and sustained finish of raspberries, herbs and spices. This is a vibrant and juicy raspberry-fruited Pinot Noir with grainy structure and good energy. Match with lamb, beef and venison over the next 5-6 years. Fruit from 70% ‘Calrossie’, southern Wither Hills, 20% ‘Cowley’, Ben Morven and 10% ‘Eaton’, Omaka sites, hand-picked, destemmed and indigenous yeast fermented to 13.6% alc., the wine aged 12-16 month in 17.5% new French oak barriques. 18.5-/20 Jun 2016”
