This is an absolutely luscious and delightful wine. It leads with rich apricot, and moves into brioche and leesy creaminess - no doubt from the five years it spent on lees in the bottle. Those cold Tumbarumba nights have resulted in vibrant acidity in the wine, which perfectly balances an otherwise powerful and heady fizz. It also has the accolades and pedigree to impress.

A well-balanced, fresh and fruity sparkling, this vino comes with notes of lemons and apples and is a guaranteed winner once the warmer months roll round. It comes from a really exciting producer and fun fact, the property was used as a military base during WWII and the wells in which machine guns were hidden still remain. And to be fair, if they keep churning out quality prosecco like this, it may take a fortress to keep thirsty prosecco-lovers out of the building.

This Cava from Vins el Cep in Penedès is not only from certified organic vineyards, but also made from the traditional local Cava varieties of xarel-lo, macabeo and parellada. The wine has perfect balance in my opinion. Complexity, yes, but not at the expense of vibrancy and purity of fruit. It’s brilliant drinking - dry as a bone and wickedly refreshing, with enough fruitiness to draw you in, and enough depth to keep you thinking. Wine has apparently been made on this patch of land since at least 1499, so you can be sure it’s a good spot for it.

Neil Prentice from Moondarra isn't afraid to give things a crack and more often than not, the result is very delicious wines. In this case, it's a crossover hit of Prosecco and Pet Nat, and man - it is a hit! It's light and cloudy, with a bit of funk on the nose, along with vibrant green apple notes. There's a light fizz and the wine is super dry and moreish. It's a wine that gives you a glimpse into the world of lo-fi, weird and wonderful, but for the most part is just utterly drinkable.
