Sidewood have made a wine almost like no other. After a huge 52 months’ ageing on lees, this wine was deemed ready to face the world in all it’s golden, luxurious richness. Bright, crystalline acidity is the driving force, shining light on a whole spectrum of incredible flavours before you ultimately fall onto a cushioned, velvety chaise lounge on the back palate. It’s like the wine equivalent of eggs benedict on a brioche bun, without any of the “oh my god so much butter” guilt usually associated with it. There’s bags of glitzy, ritzy, jazzy finesse, ending in a firework finish. Perfect for celebrations, though, really, this wine is a celebration in itself.

Cava sits halfway between prosecco and Champagne on the sparkling Venn diagram. The quality and production is in line with the premium Frenchie, but the price is prosecco-town, baby! This wonderful combination makes the style an absolute gem for discerning mofos. It’s the perfect way to add some bubbles to your BBQ or sparkles to your celebration. Keep a Champagne for a toast if the name matters to you, and pour this delight the rest of the day. Trust us, nobody will notice a difference (they’re made the same way after all). Ok mofos, here’s the thing. All bubbly that is not Champagne is inevitably compared to Champagne. And while the best sparkling you’ve ever had in your life may well not have been from there, everyone finds themselves reaching for Champagne for the really special occasions, and ‘making do’ with other stuff for everything else. Let’s end that now. Cava is traditional method sparkling from northern Spain. It’s made the same way as the French stuff, so all the festive flavour is there. This sparkling rosé from Espelt looks the absolute business too, so nobody will think it’s anything less than the very finest of wines. The packaging is beyond table-worthy and even the graceful pink hue of the wine itself adds glitz to the occasion. It’s dry and softly aromatic, with forest berries and rose petals singing on the palate. It’s incredibly drinkable. After a raised glass of this to kick off, it’ll pair with dinner seamlessly from start to finish.

Here’s the difference between Cava and Champagne. A bottle of Champagne is opened at the start of the night, to great ceremony. A round is poured, to be politely sipped during a toast, before gentile handclapping and haughty backslapping. Cava, on the other hand, means free-flowing fun all night. It means an excuse to pop six bottles at once, laugh uproariously with your mates, have a boogie to 90s R’n’B, and keep partying till 4am. Even Auntie Sharon loves it. She usually strictly limits herself to a small glass of chardonnay, before whisking Uncle Steve off home in the back of their Holden. This time, you notice, it’s gone 11pm and she’s making no signs of a move. Her cheeks grow pinker and pinker as the night progresses, and Uncle Steve jokes she’s the ‘Cava Chameleon’. So, mofos, we know what we’re drinking. What about you?

I was immediately endeared to this wine by the label, proudly describing it as ‘Brut Spumante Magnifico’. How could you possibly dislike this magnificence? The Italian wording is down to the Italian heritage of this South African winemaking family. They’ve gone for a prosecco-style wine, with tank fermentation for crisp, fruity freshness and laid-back appeal. There’s loads of fresh lime and apples, and three months of fine lees maturation adds just a smidge of creaminess to the mouthfeel. It’s a perfect match for oysters and seafood salads at dinner, or just by itself at a ramshackle get-together to celebrate nothing more than good weather.

Bet you didn’t know they made sparkling over in Western Victoria, did you? Oh, you did… Bet you didn’t know it got to be as good as this, though! This traditional method vintage Blanc de Blancs is absolutely stunning. The 100% chardonnay make-up imbues it with lively acidity and extreme freshness, with loads of oyster shell, lemon and green apple to be found on the palate. The higher acid also makes it a prime candidate for ageing - this will handle a decade or more, easily, so you can happily wait till the right occasion rolls around. Otherwise, pop that cork this weekend with some freshly shucked oysters and celebrate getting through the Mon-Fri grind!
