Twelve-year-old Nuits-Saint-Georges Burgundy. Not something you tend to happen across at your local IGA. This is entirely worthy of the hushed reverence it receives. The forest floor notes are strong here; the complexity quite stunning. Soft, cocoa dusted fruits-of-the-forest, wild pine mushroom, chicken stock, black tea, tingles of tart cranberry, silky-satin tannins. The stories are true, mofo. There's magic in those soils.

This blend of grenache shiraz shows us what the McLaren Vale is capable of producing, and certainly what Thistledown is capable of producing! Starting fro the bush trained old vines, the grenache fruit produces low yielding, intense fruit. Once picking commences, it's done gently and carefully to ensure only the best grapes are picked. Then, we get to the winemakers magic, ageing in concrete or french barrels to create that underlying oak flavour. And what's the finished result? A wonderfully vibrant and aromatic wine, featuring all manner of red and black fruits, raspberry, blackcurrant and a touch of allspice.

I’m not sure if I’d pick this as an Adelaide Hills wine in a blind tasting. It has the elegance and freshness that speak of the region, but it’s also dark and concentrated with a full, plush palate. It sits at the lower end of full-bodied and has ripe power from the fruit and abundant, fine tannins. Tomich has given it time in a combination of French and American oak and the wine is all the better for it. Plums and berries nestle in with spice and a touch of vanilla. There’s more spice and caramel on the finish. A super-solid wine that will look better and better as it opens up over a few days, if you have the patience!

Like beautifully aged shiraz from a top SA producer? Well, then this one from Salomon Estate may be the wine for you. It has a firm broad palate in classic South Aussie style, but the elegance of a European touch. Now with a decade of careful cellaring, this is a wine that is ready to enjoy and enjoy you will - it has a backbone of dark fruits, ripe tannins, dark chocolate overtones and wild herbs.

Well, we know the locals love it. Chartley Estate took home a Gold at the Royal Hobart International Wine Show for this reserve pinot. It’s from 2015 and has aged beautifully with quite a lively and silky mouthfeel. There’s strawberries, black cherries and an undertone of wild mushrooms on the palate. With five years of age on this pinot, it’s certainly ready to drink now, but there’d be no harm in laying down a couple bottles for the next few years.

My tasting notes: "A touch reductive on the nose, but full of dark berries and spice. The palate is awesome. Fresh as it should be from a high altitude place.. concentrated, with abundant tannin, nothing course, really nice tannin, slightly piquant on the finish. Medium body. Classy wine - really concentrated and tightly wound. The wine will live for a long time."
