This winery is run by Ottavia Bortolomiol alongside her daughters Maria Elena, Elvira, Luisa and Giuliana. What they are doing is so impressive, they were recently included in a Prosecco masterclass at Vue de Monde hosted by none other than Tyson Stelzer, Australia’s top sparkling wine critic. The ‘Prior’ is another unique Prosecco from this pioneering family, having only 8g/l residiual sugar. Keep in mind mofo, that number often sits in the ballpark of 12-17g/l! What that means is an extra zingy, unbelievably pure and pristine glass of bubbles. Green yet floral with a satisfying crunch that pairs oh so perfectly with seafood, sunshine, and good company!

When the cava arrives, you know it’s time to party like it’s 1999. This one from the organic producer Privat is a little rarer than your average. It’s made with 100% chardonnay as a little nod to a blanc de blancs style- and it delivers on the promise. It is looking uber fresh and fine with citrus notes at the forefront. But there’s no denying that chardy gives this bad bottle of bubbles touches of rich, nutty, toasty notes that are oh-so moreish. Find the occassion, and bust open the sparkling!

Ahh, Tasmania! The Apple Isle is without a doubt the home of the greatest sparkling wines our country can produce. We’ve got a fantastic one here that’s 60% pinot noir, 35% chardonnay and 5% pinot meunier. After 20 months on lees, the wine has an almost imperceptible dose of residual sugar, making for a refreshing, dry style of fizz with loads of complexity. This is Tassie doing what Tassie does best, making sparkling wines that rival the best coming out of France.

It takes some time to put this wine together. The pinot noir and chardonnay components are fermented separately before spending 9 months on fine lees. A blend is then made and bottled, always following the traditional method, and given another 30 months on fine lees to build even more complexity. Why go through all that effort? It’s the end result of course! Have a whiff and you’ll find peach, pear, lemon and hazelnut. Take a sip to further this sensory experience, introducing a persistent bead and dry, cleansing finish. Elegant, balanced and intricate.

We celebrate our Gapsted wines here at the ‘Fo. And what better way to celebrate than with some bubbles? This sparkling rosé is a blend of chardonnay and pinot noir, providing the best of both worlds. There’s a bit of toastiness and citrus from the chardy coupled with flavours of strawberry and apple from the pinot. Freshness abounds throughout, making for some lovely, lighthearted drinking as the days get longer and warmer. Sounds about perfect to us.
