Allow us to boast a little about this number, will you? Of course, we know Yarra Valley produces some of the best Aussie sparkling next to the cool-climate vineyards in Tassie. And it’s a mark of a truly great year when Mandala decides not to blend it in a non-vintage style. There’s only a handful of years that this producer has made this wine, and this is one of the oldest we’ve seen. This spends a huge 6.5 years en tirage for super fine bubbles and exceptional depth of toasty notes. Golden apple, ripe stone fruits, honey, almonds and brioche seamlessly find themselves intertwined on the palate, with a delightful lemon curd acidity. Call home, this is a sparkling they need to know about!

When the cava arrives, you know it’s time to party like it’s 1999. We get pretty serious about bubbles around here, so when we find a new producer to work with, you know we’re over here celebrating (with a glass of their sparkling goodness, of course). This one from Privat is elegance at every point- mostly made with traditional cava grapes xarel-lo, macabeo and parellada with just a touch of chardonnay for good measure. Made with only the free run juice (meaning no heavy handling was seen here), the purity of flavour is aparent- crisp green apple, lemon, white florals. It’s all there, right where you want it to be. Time to pop some bubbles, mofo!

It takes some time to put this wine together. The pinot noir and chardonnay components are fermented separately before spending 9 months on fine lees. A blend is then made and bottled, always following the traditional method, and given another 30 months on fine lees to build even more complexity. Why go through all that effort? It’s the end result of course! Have a whiff and you’ll find peach, pear, lemon and hazelnut. Take a sip to further this sensory experience, introducing a persistent bead and dry, cleansing finish. Elegant, balanced and intricate at an almost silly price.

Bright, clean, and as soft as a rose petal, this is an utterly charming sparkling. 100% pinot noir grapes from the Leyda Valley, roughly between the capital, Santiago and the sea giving this its unmistakable berry-rich fruit profile. Cherries, raspberries and cranberries, together with a soft potpourri of florals make for a satisfying and intricately complex experience. This’ll go down a treat with anything from seafood to cheese, and absolutely sing with anything spicy.

King Valley can turn out a fantastic prosecco. Maybe it’s the high altitude or deep Italian roots, either way the results are great. D’Sas is one of the best in the business for this style. Previous vintages have got the nod from Tyson Stelzer as best prosecco out of Aus and we think this vintage is no exception. Freshly cut green apples with a touch of creaminess to round out the refreshingly dry palate. This is the ultimate park vino. Add friends and Aperol, or just fly solo, you’ll be very popular after you pop this bottle.
