Ahhh, Hilltops. Feels like a setting from a Hobbit movie or the moon of Endor (Ewoks anyone?). Alas it’s simply a wine region in NSW, but one that’s churning out some really special cab sav. Because of its higher altitudes, the wines tend to be a bit more medium in body, leaning towards structure and nuance rather than power and punch. This example from Grove Estate gives you classic blackberry and plum, but the finish is chocolate and cedar wrapped in fine-grained tannin. Just magical.

Cimicky has been at it in the Barossa for 179 years. That’s not a typo. Since German settlers moved onto the property in 1842, it has only been in the hands of two families. Their Piping Shrike cab shiraz is as classically Aussie as the winery’s long history. It sits just below full-bodied with notes of blackberry, spice and plum. Behind that is sweet vanillin from the oak regime, providing soft tannins and excellent length.

This is yet another incredibly smashable wine from the team at Santa & D’Sas, up in the King Valley. It’s a classic Italian rosso style red, made from shiraz, sangiovese and merlot. No need to get hung up on details with this one, but we will mention there is no oak, which means the pristine fruit is just singing! Drinkability is off the charts with bright red fruits, a soft mid-palate and smooth tannin. Whether you are dialling in or making from scratch, meat-lovers special or funghi delight - we say, pizza please!

This wine from Hollick reminds me of those once-a-year, deliciously expensive artisan chocolates: a dark raspberry ganache lures you in, with a crisp-cracking exterior and a velvet-smooth core. Add in some earthiness and black fruits, plus a few seeds of vanilla bean and we’re getting pretty close. It’s a medium-bodied wine, so won’t weigh you down, effortlessly matching savoury to silky.
