What sets Adelaide Hills sauv blanc apart from the rest in Australia is the texture. And what sets this one apart from the rest of the Hills savvy bee is the incredible 98 point review. Elysian Springs utilises hand-harvested whole berries in the ferment and eschews fining before bottling to maximise this. Of course texture can’t stand alone in savvy b. You need that bright fruit! Leading the charge here is grapefruit, both on the nose and palate, with a supporting cast of guava and lime. The whole package!

Bendigo Hills is a project from the esteemed mofo fave, Rock Ferry, who are based in Central Otago, but also source organically farmed grapes in Marlborough. If there’s one thing Marlborough does well, it’s sauvignon blanc. And let me tell you, Bendigo Hills have outdone themselves here. Elegance and freshness are the first two things that come to mind, a slightly herbaceous nose, classic gooseberry and passionfruit dance on the tongue and racy citrus ties the wine together to create a seemingly perfect drop.

How can one little sauv blanc be so impressive? Not one but two trophies from two esteemed WA wine shows for this amazing wine from Wills Domain. The locals acknowledging when a local winery makes a ripper of wine. This is prototypical Margaret River savvy bee, bursting with tropical fruit and gooseberry. It’s concentrated with zippy acid and a lingering finish. For the sauv blanc fans, this is right up your alley. For those that don’t drink a lot of the variety, here’s one that’ll make you wanna jump back in. It’s that good.
