Single Vineyard

Collalto has crafted a single vineyard Hills pinot abuzz with advanced technique both in the vines and in the winery. The winery purposefully keeps yields low to concentrate flavour. Only the best few rows make the grade and are then hand-harvested. About 70% of the fruit is destemmed and whole berry fermented. The remaining 30% is kept as whole bunches. An array of French oak, varied in toast level and age, are utilised to mature the wine for eight months. Once this laborious process is complete, there’s something quite special in the bottle. There’s a nose of strawberry, beetroot and herbs, a gentle palate and a touch of spicy tannin. Over time, the earthiness hidden in the wine comes to the forefront. This is serious pinot that’ll delight the senses.
