Still prosecco. This is so freakin’ cool. A rare style of wine and certainly the first one we’ve have had at the ‘Fo. Silvano Follador is one of the most progressive, enlightened and enthralling producers of prosecco. They’ve utilised glera (the traditional prosecco variety), along with small volumes of native grapes verdiso, perera and bianchetta. The fruit is treated with biodynamic practices in the vineyard before undergoing a slow fermentation in cement tanks. After six months on lees, it’s bottled sans fizz as one of the few still proseccos in the world. It’s so pure, bright and elegant, showing citrus, minerality and even a touch of briny salinity on the finish. You’ll sense the essence of prosecco, but in something so very exciting and different.

Andrew Miller, winemaker of Artis wines first fell in love with grüner after spending time in Austria with Roman Horvath MW and tasting at Domäne Wachau. It was logical for him to look to the Adelaide Hills for this wine, as the variety is suited to the cool, high altitude region. The wine - it's fantastic! Think white peach, pear and white pepper, with the freshness of a fridge-fresh iceberg lettuce and the minerality of a very expensive spa. Beyond versatile, this is a wine for any, and all, pairings.

This medium-bodied tempranillo has ‘approachable’ written all over it and is simply hard not to enjoy. Herbal and juicy on the nose with licks of mysterious earthen cacao and cola pair with lifted bright cherries and licorice.

From ‘Les Dissedents’ range of Maison Ventenac, this 100% grenache is called Le Paria (the outcast). This references the Rhône variety being planted in Languedoc-Roussillon, where the producer believes that it thrives. Weighting in at a perfect 14%, the wine is surprisingly light-bodied, vibrant and full of life. No oak was used in the wine and the clarity of fruit is the result of this decision. Raspberries mingle with cloves and sour cherries with mineral notes. According to the producer, “these wines are uncompromising, chiselled, precise and direct.” We agree and so does Decanter Magazine, as this was included in its Top 100 Wines of the Year 2020.

This wine, according to the makers, is “paying tribute to the industry and a celebration of community, 21 winemakers in the Adelaide Hills Wine Region have come together to create the Hills Appeal Wine, a 2019 syrah meunier, with all proceeds going back into the bushfire damaged region.” We are very glad to get on board and show our support for a region that we love, and their winemakers and grape growers. The participating wineries include some of the region’s best - Shaw + Smith and Sidewood Estate to name a couple. It’s syrah with a splash of meunier and a sprinkle of a couple of other grapes. It’s dark and broody on the nose, as you’d expect from a classic Hills syrah - dark berries sit with herbs and a savoury finish. It’s medium-bodied, but concentrated and spicy. Drink now or over the next 5-7 years.

Far from the full-on, super-ripe style that is typically produced, this wine is light, bright and aromatic, without missing any of the exotic intrigue and spice of the grape. The nose is full of lychee and nutmeg and the palate green appple and florals. The wine finishes long and dry, making it a versatile fit for a variety of food.
