Barrel selection is one of the most utilised practices when making a reserve wine. Trofeo Estate ages their wines in amphorae though, but the concept still applies. Theyâve tasted the chardonnay in every amphora, selecting only the best for their top white wine. Smoothness and minerality abound, coupled with lemon, orange, cinnamon and nutmeg. Thereâs no oak to weigh it down, making for a clean and layered expression of Mornington chardonnay that highlights the purity of the fruit.

2018 was the vintage that Tassie winemakers dreamed of. Just enough rain and a long, sunny autumn. Perfect for those slow-ripening cool climate grapes. This chardonnay from Terra Verde was hand-picked, whole-berry pressed and sent straight to barrel to ferment with wild yeast. Nine months resting on lees has built texture and complexity, resulting in a delicious wine spanning the spectrum from apple to stone fruit to nectarine to flint. A bit of vanilla and spice from the oak shines through as well.

Hawkes Bay is known for bigger, richer chardy. Using American oak and malolactic fermentation also makes for bigger, richer chardy. So it is absolutely no surprise that if you put Hawkes Bay chardy into American oak to go through malolactic fermentation, you are going to end up with an immensely big and rich chardy. And thatâs just what the winemaker at Coopers Creek did. Weâre talking vanilla, cream, lemon, hazelnut and grapefruit with a bit of cedary oak in the background. If you love powerful, mouth-filling and smooth chardonnay, then this oneâs for you.

Established in 2007, Atlas can be considered the cool new kids on the block. From the artsy, minimalistic exterior of their wines to the delicious, handmade, minimal-intervention juice inside, Atlas are just plain stylish. Winemaker Adam Barton crafts small-batch wines using only the most premium quality grapes, with fruit for this particular Chardonnay sourced from the fantastic Woodside vineyard in Adelaide Hills. Balanced, bright and creamy, this lovely drop is a tropical fruit bowl packed to the rim with melon, mango, peach and grapefruit. Thereâs a pillowy softness to the palate and a lively acid line which drives its long finish.

Massena is without a doubt one of the most exciting wineries in South Australia. Based out of Barossa, their focus on making truly good wine knows no boundaries. They go where the fruit speaks to its fullest, meaning this chardy comes from cooler sites down the road in Adelaide Hills. You might reach for this one when youâre after something a little fresher, with white blossom and citrus characters in good supply. That salmon you were thinking about making for dinner would go down much better with a glass of this chardy in hand. In fact, thereâs few occasions where we wouldnât want to have a glass in our reach.

This chardonnay is from a vineyard in the northern Adelaide Hills that sits over alluvial clay and quartz. Itâs full of minerality (no surprise there), honeydew, lemon, bright acidity and just a touch of creaminess. Hello long lunch!
