Aged Cabernet Selection 3.0
- Mixed
- Various
We have to say, this one was a hard pack to pull together. Mostly because we kept drinking all of the cellar reserve cabernets ourselves, or couldn’t keep them in stock long enough to bring a trio together. The point is mofo, we got there. We all know aged cabernet can be one of those unicorns, hard to find, but priceless when you do. Our producers have done the cellaring for you, so now all that’s left to do is crack these babies open (although we suggest giving them some airing time before diving in).
Each cae contains TWO of the following wines:
Red
-
- Cabernet Sauvignon
-
- Coonawarra
- Cabernet Sauvignon
- Coonawarra
We’ve now seen vintages of this ripper deal fly out the door. For those in the know, this wine never disappoints upon pulling the cork. This cellar release may have nine years of development behind it, but give it a taste and you’ll see that it is only starting to touch its prime drinking window. Each glass of this cabernet is excellent and intriguing. The once boisterous tannins have now mellowed on the silky palate, and fruit is joined by herbaceous and somewhat meaty notes. There’s still classic cabernet cassis and blackberry, which is accompanied by rosemary, thyme and a long and savoury finish.

Bringing the absolute best out of Wrattonbully, this cabernet is the bee's knees when it comes to bang for your buck. Expressive and concentrated with plenty of cassis and blackcurrant - there’s a lovely touch of leafiness sitting with background cedary oak and spice. There’s only one thing on the menu - lamb. Whether it’s Greek gyros style, a middle eastern spiced backstrap or a good old fashioned Aussie leg roast, lamb is the key. Baa-ring it on!

Love a bit of Margaret River cabernet? So do we. Always wish that you had the patience to see how they drink in five, ten, or more years but don’t have any self restraint? Don’t worry, this is a judgement free zone. We get you, and that’s why we’re bringing you this one direct from the cellar of Dawson Wines. In its youth this was all about the ripe, fresh fruits and black olive notes, which has turned to rum n’ raisin richness with a bit of time in bottle. Herbacious, bright, savoury, delightful. Get us a mortgage and a plan for retirement- this is making us feel all grown up!
